Blue Bunny Cupcakes

Who could resist this adorable cuddly bunny? It's secret stuffing is a doughnut hole! It is perfect as a treat for a baby boy shower or Easter party.


What you need:

Reynolds® Baking Cups (Blue Plaid Party)
1 package (18.25 ounces) white cake mix
1 container (12 oz.) ready-to-spread white frosting
Blue food coloring
24 doughtnut holes
3 cups shredded coconut
24 thin pretzel sticks
24 large marshmallows
Pink sugar crystals
1 tube black decorating frosting
24 pink jelly beans
24 mini marshmallows
Recommended:  1 plain decorating tip, #3

Instructions:

PREHEAT oven to 350°F. 

PLACE Reynolds Baking Cups in muffin pans; set aside. 

PREPARE cake mix following package directions for 24 cupcakes.  Spoon batter into baking cups. 

BAKE following package directions (15 to 20 minutes).  Cool.

TINT frosting blue. Spread the top of each cupcake with tinted frosting. 

TINT coconut light blue; chop coconut until fine.

ROLL top of frosted cupcakes in chopped coconut.

MAKE bunny:

  1. Spread frosting over a doughnut hole.
  2. Roll in blue coconut to cover.
  3. Insert a pretzel stick about half way into the bottom of each doughnut hole.
  4. Insert a pretzel stick with doughnut hole attached into each cupcake as the bunny head.
  5. Cut 2 thin slices from a marshmallow for each set of ears.
  6. Press the cut edges of the marshmallows into pink sugar.
  7. Spoon blue frosting into a pastry bag fitted with a #3 plain tip.
  8. Pipe an outline of frosting around each of the marshmallow ears. Sprinkle with blue coconut.
  9. Pipe a dot of frosting on top of the bunny head and 
    add the ears. Adding more frosting if necessary.
  10. Pipe black frosting eyes with tube frosting.
  11. Add a pink jelly bean for the nose.
  12. Attach a mini marshmallow towards the back for a tail.
