Poinsettia Cupcakes

The legend of the Poinsettia is a charming story that has the flower blooming out of a bouquet of weeds gathered by a very poor little girl who had no gift to bring to the Christ Child on Christmas Eve. Following that tradition, bake these cupcakes in bright green foil to resemble a potted plant and give them to special people on your gift list.


What you need:

Reynolds® Baking Cups (Green Foil)
1 package (18.25 ounces) red velvet cake mix
1 container (16 oz.) ready-to-spread white frosting
Red food coloring
Yellow nonpareils
Decorating tip:  #366

Instructions:

PREHEAT oven to 350°F. 

PLACE Reynolds Baking Cups in muffin pans; set aside. 

PREPARE cake mix following package directions for 24 cupcakes.  Spoon batter into baking cups. 

BAKE following package directions (19 to 22 minutes).  Cool.

TINT frosting red. 

MAKE flower

  1. Touch one pointed edge of the tip lightly near the edge of the cupcake and sqeeze bag while pulling away from the center of the cupcake slightly.  Form a circle of the petals around the edge. 
  2. Next start a little closer to the center and repeat until you have three layers of petals. 
  3. Place a dollop of frosting in the center of the cupcake.
  4. Drop yellow nonpareils onto dollop of frosting until covered.
